These delicious falafels are made from millet seeds and not chickpeas meaning they are low in carbohydrates.

25 falafels

1 cup of millet

1 cup of fresh parsley finely chopped

1/2 of fresh coriander finely chopped

1 garlic clove crushed

2 tbsp almond flour

2 eggs

2 tbsp olive oil

1 tsp turmeric

1 tsp ground cumin

1/2 tsp cayenne pepper

1/2 tsp sea salt

A twist of fresh pepper

Preheat oven to fan 190 C.

First cook your millet grains with 2 cups of water on medium heat. When cooked and cooled mix the millet with all the other ingredients in a bowl. Then with your hands make 25 even size balls. Place them in a oven pan linked with baking paper and drizzle a bit of olive oil over the falafels and bake for 15-20 minutes. They should be golden and crispy on the outside and soft inside.

Served with mixed green salad and tahini dressing
