This is such a treat for the whole family. Delicious, healthy and fun way to eat chicken.

2 big skinless, boneless free range chicken breasts

2 large ripe avocados, peeled and pitted

2 tbsp fresh lemon juice

1 handful parsley, finely chopped

1/2 cup red onion, finely chopped

1 big tomato seeded and finely chopped

1 small red bell pepper finely chopped

1 small red chili finely chopped

1/2 tsp cumin

1 tsp sea salt

Butter lettuce leaves, for serving

First cook your chicken breasts. When cooked set them a side while you prepare the guacamole.

With a fork, mash the avocados with lemon juice in a small bowl. Then add the chopped onion, chili, red pepper, tomatoes, cumin and salt. Stir to combine. Then cut the chicken into small cubes and add them to the guacamole.  Mix it well and serve the salad on lettuces.
