This will make one big delicious pizza
3 cups of cauliflower (only the florets)
1/2 cup of almond flour
1 tsp of dried thyme
1 tsp of dried oregano
2 tsp himalayan salt and at twist of black pepper
1 tbsp olive oil
1 small zucchini sliced
3 cups of rocket salad
Preheat oven to 180 C.
Make your crust by chopping the florets from the cauliflower into a small rice-like size. Place them in a big bowl with the rest of the ingredients and mix it well. Pour the sticky dough into a oven pan covered with baking paper and flatten it out with a dough scraper.
Then pre-bake your pizza crust for about 20-25 minutes. Remove the crust from the oven and add the tomato sauce and zucchini. Place the crust back in the oven for another 5-7 minutes.
Finish by adding your rocket salad and the pizza is ready to be served.
