Todays lunch

Minestrone is still one of my favorite vegetable soups

4 people.

1 red pepper
1 red onion
3 garlic gloves
1/2 zucchini if it’s big or 1 small
1 handful parsley
10 cherry tomatoes
2 cups of chicken or vegetable stock
1 cup of homemade tomato sauce
2 tsp oregano
Sea salt & pepper
2 tbsp olive oil

First chop the onion and garlic, place them in a big pot and fry on low heat while you cut the rest of your veggies. Add the red pepper, zucchini, parsley, oregano, salt and pepper and stir for another two minutes on medium heat. Then add your chicken stock, tomato sauce and two tbsp olive oil and let it boil for 5 minutes, add the cherry tomatoes and let it simmer for another 10 minutes. You want your veggies to be al dente and crunchy so don’t let them cook for to long.
