Another day with detox has passed and I feel great!
Breakfast:
1 big glass of water with 2 tbsp apple cider vinegar
1 grapefruit peeled and cut
This morning I also made myself a small bowl of chia pudding
1/4 cup chia seeds
1/2 cup of unsweetened coconut milk, I like the one from Ecomill
a pinch of cinnamon
1 handful blueberries for topping
In a small bowl mix chia, cinnamon and milk. Set aside for about 10-15 minutes until it becomes like thick gel. Then add your blueberries and you will have a yummy porridge.
Snack:
Hot water with lemon
1 green apple
Lunch:
Brown rice salad for 2
2 cups organic brown rice cooked and cooled
1 small red bell pepper chopped
1 small zucchini chopped
1/2 cup red cabbage chopped
1 small fennel chopped
1/2 cup peas
a few cherry tomatoes
Himalayan salt and freshly ground pepper
1/2 lemon juice
Mix everything together and you will get a fresh and crunchy salad.
Dinner:
Sweet potato and black bean patties for 4
1 cup black beans cooked and drained
2 big sweet potatos
1/2 cup quinoa
2 garlic clove crushed
3 tbsp almond flour
2 tsp ras el hanout
1/2 tsp cayenne pepper
Himalayan salt and pepper
Preheat oven to 180 C.
Cut the potatoes in half and leave the skin on. Place them on a oven pan covered with a baking sheet. Bake them for 25-30 minutes, until soft and set aside. Meanwhile cook the quinoa followed by the instruction on the packet. Toss the cooked beans into a big bowl and with a fork mash them. Then add the potatos, just the inside not the skin. You can use a spoon to scrape it out.
Then add the quinoa and the rest of the ingredients. Mix to combine. The mixture should be moist and the potatoes soft. With a table spoon make 8-10 even size patties. Place them on a baking sheet that is lightly greased and bake them for 30 minutes. After 15 minutes gently flip them to other side.
Serve with a mixed salad and tahini dressing.
