Fourth day of detoxing and I am full of energy!

Breakfast:

I big glass of water with 2 tbsp apple cider vinegar

1 grapefruit peeled and cut

1 small bowl of chia porridge 

1/4 cup chia seeds

1/2 cup of unsweetened coconut milk, I like the one from Ecomill

a pinch of cinnamon

1 handful blueberries for topping

In a small bowl mix chia, cinnamon and milk. Set aside for about 10-15 minutes until it becomes like thick gel. Then add your blueberries and you will have a  yummy porridge.

Snack:

1 small bowl of fresh pineapple

1 glass of lemongrass tea

Lunch:

Simple and tasty salad

Serves 1

1/2 avocado sliced

1/4 English cucumber sliced

5 cherry tomatoes cut in half

1 handful baby spinach

2 cups ice berg salad sliced

You can always add more if you feel very hungry.

Season with fresh lemon juice and olive oil and Himalaya salt and freshly ground pepper. I also sprinkled some sesame seeds on top.

Dinner:

Roasted veggie salad

Serves 4

2 cups brown rice

1/2 cauliflower cut in small florets

2 sweet potatoes cut in small cubes

2 big beetroots cut in small cubes

1 garlic, bottom cut of and cloves separated

4-5 springs of fresh oregano

Himalayan salt and freshly ground pepper

1cup parsley finely chopped to mix in at the end

Juice from 1/2 lemon for seasoning.

Preheat oven to 180 C.

First cook the rice followed by the instruction on the packet and set aside. Meanwhile prepare the vegetables and place them on a oven pan covered with baking paper. Sprinkle with a bit of olive oil fresh oregano and salt and pepper. Roast for 20 minutes.

Let rice and vegetables cool of for about 15 minutes before mixing them together with the parsley. Season with some fresh lemon juice before serving.
