Another great salad to enjoy during your detox diet.
Serves 4
250g gluten free buckwheat noodles, I use King Soba (purple packet)
2 cups baby spinach
2 cups small leaf kale
2 cups broccoli small florets
1 avocado cut in bites
1/4 cup sesame seeds
Himalayan salt and freshly ground pepper
Dressing
1 tbsp apple cider vinegar
2 tbsp sesame oil
2 tbsp olive oil
1 garlic clove minced
Mix everything together and set a side.
Bring a big pot with water to boil and cook the noodles according to the packet. Use a fork to separate the noodles while cooking. Meanwhile prepare all the ingredients and toss it into a big bowl with the dressing.
When the noodles are done drain and rinse them under cold water for 10-15 seconds. Then add the noodles to the salad and turn everything together using to forks.
You can alway drizzle a bit of fresh lemon juice on top to give it a bit taste.
